Matcha Lactation Cookie Recipe

Ingredients

1 cup rolled oats

½ cup flour (wholemeal or GF works)

2 tbsp The Breastfeeding Tea Co. Lactation Matcha Latte

2 tbsp brewer’s yeast

2 tbsp flaxseed meal

½ tsp baking soda
-
½ tsp cinnamon
-
½ cup coconut oil or butter (melted)

½ cup brown sugar or coconut sugar

1 egg (or flax egg for vegan option)

½ cup choc chips (optional)
Method

Preheat oven to 180°C. Line a tray with baking paper.

In a bowl, mix oats, flour, Lactation Matcha Latte, flaxseed, baking soda, and cinnamon.

In another bowl, whisk coconut oil, sugar, and egg until smooth.

Combine wet and dry mixtures. Fold in choc chips.

Scoop spoonfuls onto tray and bake 8–10 minutes, until edges are golden.

Cool slightly before eating (if you can wait!).
